Hwp1, or Hyphal wall protein 1, is a glycoprotein on the surface of the opportunistic diploid fungus Candida albicans. It appears exclusively on hyphae, projections that emerge from the fungal surface. Hwp1 is a substrate of mammalian transglutaminase. The text describes one implication of this property in fungal pathogenicity as proved, while a possible implication involving food proteins is hypothetical.
