PepB aminopeptidase, also called Salmonella enterica serovar Typhimurium peptidase B, is an enzyme classified as EC 3.4.11.23. It catalyses the release of an N-terminal amino acid from a peptide or arylamide. Its preferred N-terminal residues are glutamate or aspartate, though it can also act on residues including leucine, methionine, histidine, cysteine and glutamine.
