Char kway teow is a stir-fried rice noodle dish from Maritime Southeast Asia. Its flat rice noodles are cooked over very high heat with ingredients that can include garlic, soy sauces, chili paste, prawns, blood cockles, Chinese chives, Chinese sausage and bean sprouts. Originally developed for Chinese labourers in Southeast Asia, it became widely popular in the region, particularly Malaysia and Singapore, from the late 20th century.
