Aeonium undulatum is an evergreen, succulent flowering subshrub in the stonecrop family, Crassulaceae. Native and endemic to Gran Canaria in the Canary Islands, it is among the larger Aeonium species. It has a bright glossy green leaf rosette on a single unbranched stem, often more than a metre above the ground. The plant is monocarpic: its flowering stem dies after producing a yellow inflorescence, normally after about five years.
