Red caviar, also called salmon roe, is caviar made from the roe of salmonid fishes, including various salmon and trout species. Its intense reddish hue distinguishes it from black caviar, which is made from sturgeon roe. It is part of Russian and Japanese cuisine. In Japan it is called ikura and may be marinated, used in sushi, or eaten over rice. In Russia it is served on buttered bread or blini.
