Frankfurter Kranz, also called Frankfurt Crown Cake, is a cake specialty of Frankfurt, Germany. It is made from a firm ring-shaped sponge cake, sliced into layers and filled with buttercream, usually with red jam. Its exterior is coated in buttercream and topped with Krokant, caramel-covered brittle nuts, sometimes with almond flakes or hazelnuts. Its crown-like form refers to Frankfurt's association with Holy Roman imperial coronations.
