Cascatelli is a modern short pasta shape with a flat strip and two parallel ruffles that project at right angles. The ruffles add texture and form a sauce trough. It was developed from 2018 to 2021 by American food podcaster Dan Pashman with the New York pasta company Sfoglini. Its design draws on mafalda and bucatini, and it closely resembles radiatori.
