Saucisson, also called saucisson sec or saucisse sèche, is a family of thick, dry-cured sausage-shaped charcuterie in French cuisine. It is typically made from pork or from pork mixed with other meats, and is similar to salami. In western Switzerland, saucisse sèche is also made, while saucisson refers only to sausages with interrupted maturation that are therefore cooking sausages.
