Ou cuisine, also called Wenzhou cuisine, is one of the four schools of Zhejiang cuisine, itself one of China’s eight major cuisines. Its name uses Dong'ou, the ancient name of Wenzhou, and was adopted after the founding of the People’s Republic of China to improve the cuisine’s popularity. Seafood is a major element. Its cooking style emphasizes light oil, light thickening, and heavy knife action.
